Gluten-Free Cinnamon Walnut Granola


7 ½ cups old fashioned, gluten free oats

1 cup walnuts, chopped (can sub any other type of tree nut)

1 cup raisins or other chopped dried fruit

1⁄2 cup flax meal

1⁄2 tablespoon cinnamon

1⁄2 cup olive oil

1⁄2 cup honey or maple syrup

1 tablespoon vanilla extract

1⁄3 cup brown sugar


  1. Preheat oven to 300 F.

  2. Combine all dry ingredients together in a large mixing bowl.

  3. Combine honey, olive oil, brown sugar, and vanilla extract in glass/microwavable bowl. Heat until the mixture begins to bubble. If you smell burnt sugar, you probably got distracted and went to nibble on the dry ingredient mixture. Understandable mistake. For best results and maximum inhalation of delicious smells, make sure to stare through the microwave door with extreme intensity. Don’t break your gaze - the microwave will sense your weakness.

  4. Pour microwaved mixture over dry ingredients and mix with hands / large mixing spoon.

    *** the microwaved ingredients may be too hot to immediately handle with bare hands, but should cool off sufficiently in a few minutes.

  5. Once wet and dry ingredients are well integrated, pour the mixture onto a large baking tray. If you like your granola a little “clumpier”, press the mixture together with your hands. The mixture should be spread out in a thin layer on the baking tray to allow for even baking.

  6. Bake granola for 20 minutes, then remove from oven and stir around before returning to oven for another 15 minutes. Granola should be light-medium golden brown when done.
