Vegan Pumpkin French Toast

This recipe was developed out of a sticky situation that we had at our last bulk buy. At the last minute, it came to our attention that there was no vegan option for our lovely BFFs. We were towards the end of cooking and only had bread, leftover sweet potato, almond milk, and spices left to create something vegan out of. Thus, vegan sweet potato french toast was born.

Ingredients:

1 baguette

2 cups vanilla almond milk

1 1/2 cups sweet potato

1 tsp. cinnamon

1/4 tsp. nutmeg

1/4 tsp. ginger

Instructions:

  1. Cut baguette into 1/2 - 1 inch slices

  2. Add all other ingredients to blender and combine

  3. Pour mixture into dish that bread can be soaked in

  4. Place a few bread slices in dish and flip until the whole slice is covered in the sweet potato mixture

  5. Place oil in a pan and heat over medium heat

  6. Add soaked bread slices to pan and cook until browned on both sides

  7. Take out of pan when done, and feel free to add additional spices or maple syrup to serve. Enjoy!
